Experimental results show that when polyphenols react with amino acids, the complexes formed significantly enhance the inhibitory effect on immune cell inflammation. Specifically, immune cells treated with a combination of polyphenols and amino acids were twice as effective at fighting inflammation as cells treated with polyphenols alone.

Then, a second study published in the journal Agricultural and Food Chemistry showed that when we add milk to coffee, the rich protein in it undergoes a similar binding reaction with the polyphenols in coffee. This combination is not limited to coffee and milk, but may also occur in other food combinations, such as meat and vegetables, fruits and milk, etc. This means that through clever food combinations, we can promote beneficial polyphenol-protein interactions, resulting in stronger anti-inflammatory effects.

Currently, these findings are mainly based on cell experimental data, and the researchers plan to further verify these results in animal models and ultimately explore their long-term effects on human health. In addition, scientists are exploring an innovative approach by engineering protein structures to better encapsulate and deliver polyphenols, ensuring they can be absorbed and function more effectively in the body.
